Fruit cake
Recipe
* 500g Flour
* 500g butter
* 10 large eggs
* 300g or 400g sugar (depending on how sweet you want it)
* 2 teaspoon baking powder
* 1 tablespoon flavour (any flavour of your choice - vanilla, butter scotch)
* 300g mixed fruit
* 2 teaspoon mixed spice.

Preparation
1. Make sure you soak your dry fruits in alcohol for at least a week before use.
Alcohol to use : Rum, 501 or Brandy.
Fruit to use : Any fruit of your choice -Mixed fruits, cherries, berries.
2. Preheat your oven for 15 minutes at 150 degree Celsius.
3. Grease your baking pan with butter and dust lightly with flour. This is to prevent the cake from sticking to the pan. This recipe is for 10 inches pan (10" X 3 inch deep).
Method
1. Sieve all the dry ingredients (Flour, baking powder, mixed spices) together in a bowl and set aside.
2. Mix butter and sugar together in a mixing bowl for about 15 to 20 minutes.
3. Break in the eggs into the butter and sugar one at a time, add flavour and mix well for about 3 to 5 minutes.
4.Then pour the dry ingredients into the butter gradually and mix till well incorporated.
5. Add the mixed fruit and mix well.
6. Pour the batter into your prepared pan and bake for about 35 to 40 minutes depending on the type of oven you are using.
The cake is ready when a skewer or cake tester inserted into the cake comes out clean.
Note: Preservative powder is optional in making Cakes, but it is used by most bakers to extend the shelf life of the cake. It is best used for wedding and birthday cakes that needs to be preserved or coated with fondant or icing.
Also, the alcohol used in this recipe helps to keep the cake from going stale, that's the reason why preservative was not mentioned in the recipe above.
